There was one published recipe, one obvious question, and an eleven-year delay in answering it.
INDIAN NACHOS
Roasted chickpeas and Yukon Gold potatoes. Pepper Jack. Tamarind. Coriander yogurt. Tortilla chips meeting papri chaat in public.
ARCHIVAL REPRODUCTION / ORIGINAL CLIPPING TO BE INSERTEDThe first Indian Nachos recipe appeared in The Boston Globe in June 2015: garam masala-roasted chickpeas and potatoes over tortilla chips, finished with cheese, tamarind chutney, coriander yogurt, salsa, lime, cilantro, and mint.
It was described as a riff on papri chaat. That phrase contains the whole project. Chaat had already solved the structural problem: something crisp, something substantial, sauce, coolness, acid, and a final layer of crunch. The tortilla chip simply made the translation unusually visible.
In 2015, The Boston Globe published my recipe for Indian Nachos.
I have spent the intervening years avoiding the obvious question:
