A STRUCTURAL EXPLAINER / 101
Centuries before the tortilla chip.
Chaat is a family of Indian street snacks built by layering contrasts: crisp and soft, hot and cool, sweet and sour, immediate and impossible to eat neatly.
The structure. Fried dough, hollow shells, gram-flour strands: different forms of the first necessary crack.
Something substantial enough to make a snack feel like an event.
Sweet-sour depth and herbaceous heat, often working in deliberate opposition.
Cultured yogurt softens the heat and gives the whole construction its temperature contrast.
The final correction: salt, spice, herbs, onion, and a second form of crunch.
